JUICE FER TO SOAK PORK ROAST IN

 

3 CUPS ORANGE JUICE

4 SLICED & SMASHED LIMES (YEAH, THROW EM IN)

2 ROUGH CHOPPED ONIONS

½ BUNCH CILANTRO

1 FAT TABLESPOON OF OREGANO

LIBERAL DOSE OF GROUND CUMIN

GO CRAZY ON CRUSHED BLACK PEPPER

DASH OF CINAMON (REALLY, PUT IT IN THERE)

 

PUT IN SAUCE PAN & HEAT TO FIRST BOIL

IMMEDIATELY TAKE OFF HEAT AND TRANSFER TO

GALLON SIZE ZIPPER STORAGE BAG AND ADD BIG

GLASS OF ICE CUBES TO COOL

*** MUST BE COOL BEFORE MARINADE TOUCHES ROAST***

 

3 TO 4 POUND PORK LOIN ROAST

 

PLACE ON CUTTING BOARD AND PUNCH 793 HOLES

IN ROAST FROM ALL DIRECTIONS WITH KNIFE

SHARPENING STEEL (THAT ROUGH ROUND THING

THAT COMES WITH A KNIFE SET THAT YOU DON’T USE)

SMASH 3 FAT ASS GARLIC CLOVES AND RUB INTO ROAST

 

PUT ROAST IN BAG WITH COOL MARINADE AND “BURP”

ALL THE AIR FROM BAG. SCRUNCH ROAST IN BAG TO

DISTRIBUTE ALL THE GOOD STUFF

CHUNK IN FRIDGE AND LEAVE IT TILL TOMORROW

 

BEFORE YOU CLEAN UP THE KITCHEN; PUT A BAG

OF BLACK BEANS ON THE STOVE AND BRING TO

A RAPID BOIL. TURN OFF HEAT AND LEAVE THEM

ALONE *** DO NOT ADD SALT OR ANY SPICE***

 

CLEAN UP KITCHEN AND GO TO BED ;~)

 

 

GOOD MORNING – DRINK SOME COFFEE AND

BEANS GET FIRST PRIORITY

 

DRAIN THEM AND CLEAN THE POT

(SAME CLEANED POT) CHOP UP A LITTLE BACON

THROW IT IN THE POT AND GET IT GOOD AND BROWN

NO SOGGY LIMP ASS BACON ALOWED

TAKE OUT BACON AND PUT IN ½ ROUND OF SMOKED SAUSAGE

ADD TWO FINELY CHOPPED ONIONS WITH SAUSAGE

WHEN ONIONS ARE TRANSLUCENT ADD TOO MUCH GARLIC

(DO NOT COOK GARLIC; JUST GET IT HOT)

ADD TOO MUCH LOUSY-ANNA HOT SAUCE AND

DUMP IN THE BEANS AND COVER WITH WATER

2 BAY LEAVES SOME CUMIN AND

DUMP THE BACON BACK IN

2 TABLESPOONS (YEAH, FAT ONES) OF JOLLY-PINJO PEPPERS/CHOPPED

TURN UP THE HEAT TO BOIL THEN DOWN TO SIMMER FOR ABOUT

3 TO 4 HOURS

 

BACK TO THE ROAST

 

 REMOVE FROM MARINADE AND PUT IN ROASTING PAN

LIGHT DUST OF OREGANO AND PEPPER AND CUMIN

AND GARLIC

THIN SLICE 2 ONIONS AND COVER ROAST WITH ONIONS

SEAL THE ROASTING DISH AND DON’T OPEN FOR (MINIMUM)

3 HOURS

FINAL STEPS BEFORE CHOW TIME

 

MAKE A COUPLE CUPS OF LONG GRAIN WHITE RICE

ADD SAFFRON IF YA GOT IT

SMASH ALL THE JUICE FROM 2 LIMES

CHOP REMAINING ½ BUNCH CILANTRO

 

ADD AND STIR INTO BEANS RIGHT BEFORE SERVING (NOT THE RICE)

 serve the pork roast & beans over the rice................. BON APETIT

leftover roast will make really good Cuban Sandwich ;~)
