Walleye is flaky when cooked and is very good here in Tenn we have Sauger.

Walleye has a light texture its mostly breaded and fryed. I've been thinking of trying to bake it however.

Perch have small fillets and are very good fryed.

My son went out last night around midnight and after.  Didn't catch anything. The best time for bites is at dusk.

Beer thirty..
